These garlic prawn tacos with mango and lime are great as a main for 2-3 people or as an appetizer for 8 people. The ingredients sing of summertime and the best part is that they come together so quickly, you won’t spend hours in the kitchen.

Uncooked prawns, avocado, mango, cucumber, lime, smoked paprika, yogurt, coriander and olive oil

How to make Smoky Garlic Prawn Tacos

1. Ingredient prep

Prepare all the taco ingredients into little bowls. Heat each tortilla one at a time over a gas flame for about 5 seconds each side, or in a dry hot pan cook on each side for 20 seconds.

2. Make the prawn (shrimp) marinade

Combine the salt, pepper, smoked paprika, garlic and 1 tbsp olive oil to a bowl, add the prawns (shrimp) and toss to coat.

3. Cook the prawns (shrimp)

In a pan on medium high heat, add a little olive oil then add the prawns and cook for 2-3 minutes on one side, then turn over and cook for another 2-3 minutes, or until prawn are fully cooked through.

4. Serve and assemble

Serve all the taco ingredients together for a DIY situation. To the taco, layer on a little yogurt, avocado, mango, cucumber then add the prawns, add coriander and tajin squeeze over lime and dig in.

What if mangos are out of season?
You can make these as they are without mango and just increase the avo and cucumber, or try tomato, it won’t have as much of a sweet flavour but it goes with all the other ingredients really well.
