If summer had a flavour, this may just be it. Smoky garlic prawns with mango, avocado, cucumber, lime and Tajin make the most delicious tacos you’ll want to remake all summer long.
- 500g raw, peeled & deveined prawns
Instructions
- Prepare all the taco ingredients into little bowls and heat each tortilla one at a time over a gas flame for about 5 seconds each side, or in a dry hot pan cook on each side for 20 seconds
- Combine the salt, pepper, smoked paprika, garlic and 1 tbsp olive oil to a bowl, add the prawns (shrimp) and toss to coat
- In a pan on medium high heat, add a little olive oil then add the prawns and cook for 2-3 minutes on one side, then turn over and cook for another 2-3 minutes, or until prawn are fully cooked through
- Serve all the taco ingredients together for a DIY situation. To the taco, layer on a little yogurt, avocado, mango, cucumber then add the prawns, add coriander and tajin squeeze over lime and dig in.
