An orange salad is basically your perfect salad. Serve it as a side for a weeknight dinner, a light lunch, and of course, when you’re asked to bring a salad to an event, bring this salad. During winter, when citrus is at its peak, this salad will shine, but really it could (and should) be made all year round.

It’s flavourful enough to serve with Christmas dinner, and simple enough as well, because, obviously there’s so much going on at Christmas, who has time to make a complicated salad? Throw it together quickly, get on with cracking bon bons.

Tips for salad success

  • Buy toasted almonds, it makes all the difference to the flavour!
  • Don’t skip the zest! Even if you just have a microplane, and not a fancy zester, you get the most delicious concentration of orange flavour when the zest is added into the salad.
  • Like most salads, wait until you’re about to serve to add the dressing, to keep the ingredients fresh and crisp.

Variations to try

Add some sliced cooked chicken breast to turn it into a light lunch, it’s great. Sub in some grapefruit for citrus variety if you’re feeling it or add roasted sweet potato for a heartier vegetarian option.

How to make it - step by step!

1. Make the dressing

Combine the dressing ingredients into a jar with a lid, shake to emulsify.

Zest one of the oranges using a zester or microplane.

3. Slice the oranges

Cut the peel off all the oranges, then slice the oranges into circles and semi circles.

Slice the cucumber, in half lengthwise, then dice into semi circles.

  • 2 tbsp lemon juice
  • 1/2 tsp apple cider vinegar
  • 3 tbsp olive oil
  • 1/2 tbsp honey
  • 1/4 tsp flaky salt
  • 1/4 tsp freshly ground black pepper

  • 3 whole oranges
  • 1/2 cup toasted almonds
  • 100g feta, crumbled
  • 1 cucumber
  • 3 cups rocket/arugula
  • 1/2 cup mint
