When the sun is beating down, the humidity is high and it's too darn hot to cook, there’s only one thing to do (apart from sticking your face into the freezer for minutes on end)... Make this watermelon salad! It’s refreshingly cool, hydrating and just delicious. Take it to a BBQ, or make it alongside some cooked chicken or fish. If you’re a watermelon lover, this will be your new fave way to eat it.
It’s best to make the salad the day you want to eat it, I wouldn’t suggest making it the day before.
Ingredients and substitutions
How to make it - step by step!
Preheat oven to 180 C / 355 F, to a lined baking tray, add almonds, 1 tbsp olive oil, 1 tbsp maple, ½ tsp salt and 1 tsp smoked paprika, toss to combine, bake for 15 minutes, allow to cool.
Combine lime juice and zest with olive oil in a jar, shake to emulsify.
Combine salad ingredients and almond praline onto a platter or bowl, when ready to serve, drizzle over dressing then toss to combine. Keep the salad nice and cold in the fridge until ready to serve.
STYLING TIP - keep aside a little of each ingredient to top with after tossing all ingredients together.

Almond praline
- ½ cup flaked almonds
- 1 tsp smoked paprika
- 1 tbsp maple syrup
- ¼ tsp Sea salt
- ¼ tsp black pepper
- 1 tbsp olive oil

Dressing
- 1 lime, juice and zest
- ¼ cup olive oil

Salad ingredients
- 2 cups of watermelon, cut into cubes
- 250g punnet strawberries, sliced
- 1 cucumber, halved and sliced
- 2 cups rocket
- 50g feta cheese, crumbled
- 1 cup mint leaves
- ⅓ cup pistachios
