Strawberry, Watermelon & Feta Salad

Fresh, juicy and sweet! This watermelon, strawberry and feta salad with spiced caramelised almonds and a lime dressing is summer in a salad bowl!

Preheat oven to 180 C / 355 F, to a lined baking tray, add almonds, 1 tbsp olive oil, 1 tbsp maple, ½ tsp salt and 1 tsp smoked paprika, toss to combine, bake for 15 minutes, allow to cool
Combine lime juice and zest with olive oil and olive oil in a jar, shake to emulsify
Combine salad ingredients into a bowl, when ready to serve, drizzle over dressing then toss to combine. Keep the salad nice and cold in the fridge until ready to serve
Styling tip - keep aside a little of each ingredient to top with after tossing all ingredients together.
