Strawberry, Watermelon & Feta Salad

When the sun is beating down, the humidity is high and it's too darn hot to cook, there’s only one thing to do (apart from sticking your face into the freezer for minutes on end)... Make this watermelon salad! It’s refreshingly cool, hydrating and just delicious. Take it to a BBQ, or make it alongside some cooked chicken or fish. If you’re a watermelon lover, this will be your new fave way to eat it.

What you need to make Strawberry, Watermelon & Feta Salad

Watermelon, feta, strawberries, lime, rocket, pistachios, almonds, honey, cucumber, olive oil and spices
Make sure it’s fresh and ripe
Look for ripe strawberries that don’t have any bruising
A delicious fresh crunch
Rocket / arugula
For a peppery element (goes well with strawberries!)
Feta cheese
A creamy salty element
Mint leaves
A herby element
For more added crunch
A zesty citrus flavour for the dressing
Olive oil

Flaked almonds

How to make Strawberry, Watermelon & Feta Salad

1. Make the spiced almond praline

Preheat oven to 180 C / 355 F, to a lined baking tray, add almonds, 1 tbsp olive oil, 1 tbsp maple, ½ tsp salt and 1 tsp smoked paprika, toss to combine, bake for 15 minutes, allow to cool.

2. Make the lime dressing

Combine lime juice and zest with olive oil in a jar, shake to emulsify.

3. Assemble the salad

Combine salad ingredients and almond praline onto a platter or bowl, when ready to serve, drizzle over dressing then toss to combine. Keep the salad nice and cold in the fridge until ready to serve.

STYLING TIP - keep aside a little of each ingredient to top with after tossing all ingredients together.
