Baked feta with honey and thyme wrapped in a flakey filo wafer thin crust and golden brown sesame seeds, what more can I say? It takes like 5 minutes to prep? It sure does! This Greek inspired dish (called feta me meli) has had a bit of a moment on the internet and there’s good reason for it. Not only does it tick all the flavour boxes, this baked feta filo parcel will be in your hot little hands in under 30 minutes!

Yes you can, if you follow the steps until the feta parcel is wrapped. Then place in an airtight container, place in the fridge a day in advance or freeze until required, and then bake from frozen.
You can also make little ‘finger’ versions of these by cutting the feta into ‘fingers’ and cutting the filo into smaller sections. The steps are the same but the result is a more bite sized morsels.

How to make it - step by step!
Preheat oven to 180 C. Mix together olive oil and butter in a bowl.
Working on a clean surface, lay out one sheet of filo pastry. Brush with oil mixture: Using a pastry brush, delicately coat the filo sheet with the olive oil and butter mixture. Lay over another sheet and brush with more mixture.
Sprinkle fresh thyme leaves evenly over the filo sheets for aromatic herbiness that will infuse the feta parcels as they bake.
Place a block of feta at one end of the pastry roll to make a parcel: Gently roll the filo pastry over the feta block, ensuring a snug fit.
Position the prepared filo parcel on a baking tray, ensuring the folded side is facing down. Give your parcel a final brush of the olive oil and butter mixture, sprinkle sesame seeds generously over the top for that added crunch and nutty flavour.
Pop the tray into the preheated oven and let the magic happen. Keep an eye on it; the goal is a golden-brown, crispy exterior.
Remove from the oven and drizzle honey over the crispy filo parcel, scatter with thyme and dill leaves, and serve while warm.

Baked Filo Feta Parcel
- 2 blocks of Greek style feta cheese
- 4 pieces of filo pastry, defrosted
- ¼ cup butter, melted
- ¼ cup olive oil
- 2 tbsp thyme leaves
- 1 tsp dill leaves
- ½ tsp sesame seeds
- ¼ cup raw honey
- Preheat oven to 180 C / 355 F. Mix together olive oil and butter in a bowl
- Lay out 1 sheet of filo pastry onto a clean work surface, brush with oil mixture. Lay over another sheet on top and brush with more mixture
- Scatter thyme leaves over the pastry, place a block of feta at one end of the pastry, then roll to make a parcel
- Fold over the ends bruising with oil mixture to seal
- Place onto a baking tray with the folded side underneath, brush with a little more mixture then scatter with sesame seeds
- Bake for 20-25 minutes or until golden and crisssspy
- Remove from oven, cut in half, drizzle with honey and more thyme leaves
