Baked Filo Feta Parcel

Baked feta with honey and thyme wrapped in a flakey filo wafer thin crust and golden brown sesame seeds, what more can I say? It takes like 5 minutes to prep? It sure does! This Greek inspired dish (called feta me meli) has had a bit of a moment on the internet and there’s good reason for it. Not only does it tick all the flavour boxes, this baked feta filo parcel will be in your hot little hands in under 30 minutes!

Fore more simple and delicious snacks, Smoked salmon on rye, Unreal sardines on toast and Hot Honey Halloumi are my go-to.

Frequently asked questions
Can I make this ahead of time?

Yes you can, if you follow the steps until the feta parcel is wrapped. Then place in an airtight container, place in the fridge a day in advance or freeze until required, and then bake from frozen.

Can I adapt this to finger food style?

You can also make little ‘finger’ versions of these by cutting the feta into ‘fingers’ and cutting the filo into smaller sections. The steps are the same but the result is a more bite sized morsels.

Butter and olive oil
For gluing the filo sheets together and making everything deliciously golden.
Thyme and dill leaves
Added for a herbaceous kick.
Sesame seeds

Raw honey
For drizzling over the golden pastry, and the sweet component of the dish.
