Ok if you’ve never tried grapes on a pizza, this is a sign that you need to. Dare I say, it’s kind of a foodies right of passage. Roasted grapes in general are amazing, and on a pizza, well it’s a flavour combo you’ll keep craving for. This is such a great weekend lunch recipe or even weeknight dinner. It’s so simple and quick to make, and also feels hella fancy to eat a pizza topped with your fave cheese board accompaniments.

Here is my recipe for homemade pizza dough, it's so easy and always tastes better homemade. But you can also use a good quality store bought dough if you're in a time pinch.

What if I can’t get quince paste?

I wouldn’t recommend a normal fruity jam like raspberry, it’s too sweet. Instead look for something similar like a fig or plum paste.

How to make it - step by step!

Rolling out pizza dough
1. Roll out dough

Preheat oven to full whack. Roll out pizza dough onto a clean, floured piece of baking paper, into rough 20 x 30 cm shape.

Spreading quince paste onto pizza dough
2. Cover with quince paste

Carefully spread the quince paste across the dough.

Layer cheese onto pizza dough
3. Add cheese

Scatter over parmesan cheese and lay the brie across in a random way across the pizza.

4. Add grapes and pine nuts

Then place on the grapes and scatter over pine nuts evenly, some grapes will be clustered, others in small cut slices.

5. Bake pizza

Place the baking paper with pizzas in the oven directly onto the oven rack. Cook for about 7-9 minutes, or until the edges become golden and the cheese is melted.

6. Cut and serve

Remove from the oven onto a cutting board. Drizzle over honey and scatter over thyme. Season with a small pinch of salt, then cut into angled pieces.

  • 3 tbsp raw honey
  • 1/4 cup thyme
