Whether it’s grilling season, you need a simple (yet impressive) side dish, or you’ve just got a corn craving (yep), this charred corn recipe is for you. Gnarly, juicy and sweet corn layered with spices, and a delicious chilli and lime Mexican seasoning called Tajin that takes this dish to an entirely new level.
Serve these alongside pulled pork or tacos and party on.

How to make it - step by step!

How to Cook the corn under the grill/broiler- Heat grill/broiler to high, place corn on a tray and grill on all sides until slightly charred, keep an eye on it doesn’t blacken too much in one area.
How to cook the corn on a gas hob flame or BBQ - place corn on a wrack over a flame, then turn regularly until charred all over.

Meanwhile, mix together Mayonnaise and chipotle in a small bowl, serve alongside the corn.

Melt 75g of butter, add 1 tsp garlic powder, 1 tsp onion powder, and 1 tbsp smoked paprika, then.

Spoon melted butter mixture over the corn covering the all the surface area, then sprinkle over a little dusting of Tajin and coriander.

Charred Corn
- 6 whole corn on the cob (husk and silk removed)
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
- 75g butter
- 1 tbsp tajin
- 1 lime juice
- ¼ cup coriander, finely chopped
- 2 tbsp chipotle in adobo
- ½ cup Kewpie mayonnaise
- Heat grill/broiler to high, place corn on a tray and grill on all sides until slightly charred, keep an eye it doesn’t blacken too much!
- You can also do this on a gas hob flame or BBQ, place corn on a wrack over a flame, then turn regularly until charred all over
- Meanwhile, in a small bowl, mix together mayonnaise and chipotle

- Brush melted butter mixture over corn, then sprinkle over tajin and coriander
