I’ve lost count how many times I’ve made this dish. I make it a lot because it’s so quick and easy to pull together, and you get layers of complex flavour like a classic chili recipe with minimal effort, using ground beef, spices and a few sauces and condiments that will transport you to flavour town.
The ingredients you'll find in this recipe are pantry staples you'll likely have in your cupboard right now.
They key to really nailing these flavours is getting the balance of spices, the right amount of sweetness, tang, smokiness and of course heat. Once you layer everything in, taste and adjust to get it to your liking.
A note on the tomatoes. I like to puree one can of the tomatoes to create a thicker sauce consistency, but that is totally optional, it's just as tasty using crushed tomatoes.
You can make a version of this low and slow using beef brisket, but I specifically developed an easy chili recipe with ground beef to make for weeknight dinners or meal prep lunches in winter.

A quick and easy chili recipe calls for ground beef. You can brown it off very quickly and build flavour off it. For a low and slow cook, I love to use a brisket in the slow cooker using these ingredients.

How to make it - step by step!
Soften the onion and garlic in olive oil for about 3 minutes, then add the beef mince, season with salt and pepper, cook until browned (about 5-6 minutes).
Add spices and stir through, cook for 1 minute, then add black beans, tinned tomatoes and the remaining sauce ingredients. Cook for 5 minutes.
Taste, season and add in diced capsicum. Simmer gently for another 10 minutes.
To serve, spoon some chilli into bowls, top with sour cream, cheddar, cilantro / coriander and serve with corn chips.

For the Chilli:
- 500 g beef mince
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, diced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tbsp smoked paprika
- ½ tsp ground cinnamon
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp allspice
- 1 tsp salt
- 1 tsp pepper
- 2 x 400 g tinned tomatoes, one tin blended to a puree
- 2 x 400 g tinned black beans
- 1 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tsp apple cider vinegar
- 3 tbsp chipotles in adobo + extra for topping
- 3/4 cup beef stock
- 1 red capsicum/bell pepper, finely diced
To serve:
- 4 tbsp sour cream
- 200g corn chips
- ¾ cup shredded cheddar cheese
- ¼ cup cilantro / coriander (optional)
